Emile Henry Presents FlameTop in Azure -- A Rich Mediterranean Blue
New Castle, DE - 2009 - Emile Henry presents a Flame-Top roaster, stewpots and a brazier in Azure, a rich Mediterranean blue that beautifully compliments the Emile Henry Flame-Top Figue color. Flame-Top cookware is available in black, red, green, figue and now azure.
Flame-Top cookware is made of a flameproof ceramic. It is designed to go directly on a heat source; gas flame, an electric or halogen stove, even a barbecue grill. Flame-Top cookware is much lighter, 30%, than comparable metal cookware and yet it is a heavy duty, durable workhorse. It is microwave and dishwasher-safe where metal cookware is not. Its? surface cleans up easily and it is so durable that a cook can cut directly in the cookware - even with an electric knife without fear of scratching, chipping or cracking the surface. Flame-Top goes under the broiler and directly from a freezer or refrigerator into a hot oven.
In terms of cooking performance, Flame-Top is ideal for braising, browning and slow cooking due to the gentle and steady heat distribution properties of Burgundy Clay. Flame-Top pots cook evenly and thoroughly when used on top of the stove, in the oven or even in the microwave. Enhancing this gentle cooking action are raised dots on the underneath side of each lid that evenly distribute evaporated juices directly back into the cooking food. This self-basting technique produces a more thoroughly cooked, tender and moist dish than with traditional lids, which force liquids to run down the sides of the pot, and which contribute to uneven cooking. The thoughtfully simple design of the lid?s central knob allows it to sit on the table when inverted.
The pots are light enough so that they can be carried comfortably to the table even when full of food while the heat retention properties of the Burgundy Clay allows the pots to repurpose as serving dishes keeping stews and meats warm for second helpings. The lug handles are easy to grasp, even when using oven gloves.
