Emile Henry Presents the Flame-Top Cassoulet
A Dish Rooted in the History of Southwest France


New Castle, Delaware - "February 2, 2010" Cassoulet, a traditional stew from Southwest France, is a slow cooked meal packed with meats and beans and spices. Today, rustic inns and restaurants in every province of France consider this intimate, delightful stew their prized dish. There are many recipes and variations on the ingredients but the traditional Cassoulet stew is cooked in a pot that is shaped slightly like a cone making room for a lot of yummy crust on the top. Emile Henry debuts a Flame-Top Cassoulet pot to the American market. This 2-qt Cassoulet is available in figue, a deep, rich, delicious color. The Cassoulet retails for $125.

The Flame-Top Cassoulet is made of a flameproof ceramic. It is designed to go directly on a heat source; gas flame, an electric or halogen stove, even a barbecue grill. Flame-Top cookware is much lighter, 30%, than comparable metal cookware and yet it is a heavy duty, durable workhorse. It is microwave and dishwasher-safe where metal cookware is not. Its? surface cleans up easily and it is so durable that a cook can cut directly in the cookware - even with an electric knife without fear of scratching, chipping or cracking the surface. Flame-Top goes under the broiler and directly from a freezer or refrigerator into a hot oven.

The Cassoulet is ideal for braising, browning and slow cooking due to the gentle and steady heat distribution properties of Burgundy Clay. It cooks evenly and thoroughly when used on top of the stove, in the oven or even in the microwave. Enhancing this gentle cooking action are raised dots on the underneath side of each lid that evenly distribute evaporated juices directly back into the c food. This self-basting technique produces a more thoroughly cooked, tender and moist stew than with traditional lids, which force liquids to run down the sides of the pot, and which contribute to uneven cooking. The thoughtfully simple design of the lid?s central knob allows it to sit on the table when inverted.

The Cassoulet is light enough so that it can be carried comfortably to the table even when full of stew while the heat retention properties of the Burgundy Clay allows the Cassoulet to stay hot at the table.
