Ingredients
Pie Filling
- 2 pounds Jonathan apples
- 2 pounds Bosc pears
- 2 tablepsoons fresh lemon juice
- 1/2 cup granulated sugar
- 1 tablespoon cornstarch
- 1/2 cup milk chocolate toffee bits
Pie Crust
- 1 1/4 cups all-purpose flour
- 1/4 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup cold butter - cut into 1/2-inch pieces
- 4 - 6 tablespoons ice water
Streusel Topping
- 2/3 cup all-purpose flour
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 cup granulated sugar
- 1/3 cup firmly packed brown sugar
- 6 tablespoons cold butter, cut into 1/2-inch pieces
- 1/2 cup milk chocolate toffee bits
Instructions
Prepare the pie filling: Peel and core the apples, and cut into slices (approximately 16 slices per apple). Place into a large saucepan. Peel and core the pears and cut them into pieces uniform with the apple slices; add to the saucepan. Top with lemon juice, toss. Add in the granulated sugar and cornstarch and heat over medium heat until fruit begins to soften, approximately 8 - 10 minutes, stirring occasionally. Transfer to a large bowl, cool completely. Stir in the toffee bits. Meanwhile, prepare the pie crust: Sift together flour, baking powder, and salt in a large bowl. Using a pastry blender, cut in the butter until coarse crumbs form. Add in the water, a little at a time, until dough comes together. Place onto a floured work surface, knead for 30 seconds to one minute. Shape into a flat disc, wrap in plastic wrap and refrigerate for 30 minutes. Preheat oven to 375 degrees. Roll out the dough and place in your favorite Emile Henry pie plate. Pierce dough several times with a fork. Line with aluminum foil and add pie weights or dry baking beans. Place in preheated oven and bake for 10 minutes; remove pie weights or beans and foil and continue to bake crust for another 5 minutes. Prepare the streusel: Sift together flour, cinnamon and nutmeg into a large bowl; mix in the granulated sugar and the brown sugar. Using a pastry blender, cut in the butter until coarse crumbs form. Stir in the toffee bits. Assemble the pie: Place the pie filling into the partially baked pie crust; top with streusel. Place pie into oven (still set at 375 degrees) and bake for 40 - 45 minutes, until lightly browned. Cool and enjoy! I just received my Emile Henry pie plate for Christmas - in my favorite color blue.
