Ingredients

- 1 lb ground sirloin
- 1 large yellow onion
- 1/4 lb bacon
- 1 /4 cup maple syrup
- 1/4 cup flour
- 1 tsp salt
- 1 cup cheddar cheese
- 2 tbsp butter
- 2 cups milk
- 2 tbsp yellow mustard

- 1 tsp salt
- 1/2 cup lard/shortening
- 1 1/2 cup flour
- 6 tbsp ice cold water
Instructions
Make the pie crust by mixing together the shortening, salt and flour while slowly adding the ice water until a basic dough forms. Roll or press out enough dough to fill a 9" round, and make a top. Next prep the milk for the roux by combining with yellow mustard, allow mixture to stand for a minimum of 15 mins. Preheat the oven to 400. Place the bacon on a parchment or silica lined cooking sheet and coat with the maple syrup. Bake at 400 for 20 mins. While bacon is cooking, brown the beef in a pan with the chopped onion, drain and remove. Next in the same pan create a roux with the mustard/milk mixture, then add the cheese. Once the cheese has melted, incorporate the beef and onion mixture, bacon and roux into the pie dish, cover and make a few vent holes on top with a knife . Bake on middle rack at 400 for 30-35 min or until top is golden brown. Allow to cool for about 10 min before serving.
