Goat's Cheese Green Bean Salad recipe

Ingredients

  • 1 lb green beans
  • 1 onion
  • 1 clove of garlic
  • 5 1/2 oz fresh goat's cheese
  • 3 tablespoons olive oil
  • 2 tablespoons vinegar
  •  fresh basil
  • 2 large tomatoes
  •  salt and pepper

Instructions

Recipe for 6 servings
Remove the ends of the green beans and cut in half lengthways. Wash and cook in salted boiling water for ten minutes. Drain and let cool. Put aside 2 tablespoons of the drained water. Peel and chop the onions and garlic. Mash the goat?s cheese with a fork in the small round bowl. Add onion and garlic and the reserved vegetable water, 3 tablespoons of oil and 2 tablespoons of vinegar. Sprinkle lightly with salt and pepper. Whisk vigorously. Cut up 4 fresh basil leaves. Wash and slice the tomatoes. Place the green beans, tomatoes and basil in the large bowl. Pour the cheese sauce over them. Cool and serve.
