Roasted Vegetables


  • 1 onion, quartered and semi separated layers
  • 1 bell pepper, seeded and cut into 6 pieces
  • 3 cloves garlic, peeled and left whole
  • 1 yellow squash, cut into ½” pieces
  • 4 tablespoons extra virgin olive oil
  • salt and pepper

Temperature: 350 ° F


Preheat oven to 350F.
In a bowl place all ingredients except the salt and pepper.
Toss together to coat with the oil.
Transfer into the lasagna dish.
Season with salt and pepper
Place in the oven and roast for 30-45 minutes or until vegetables are tender and have a light char.
Remove from the oven and enjoy.
