Mixed Berry Crumble
3lb. bag of frozen mixed fruit
1 lemon, cut in half
¾ cup granulated sugar
2 tbsp. cornstarch
1 cup (packed) golden brown sugar
3/4 cup all-purpose flour
1 1/4 sticks chilled unsalted butter, cut into 1/2-inch cubes
1/3 cup almonds, chopped
Preheat oven to 375F.
In a large stewpan, add the mixed fruit and granulated sugar. Mix and begin to cook over medium heat.
Squeeze ½ lemon over fruit, making sure to catch any seeds.
Squeeze the other half of the lemon into a small bowl and whisk in the corn starch. Once smooth, pour into the fruit.
Let the cook fruit until thickened, about 15-20 minutes, and pour into the Emile Henry Small Rectangular Baker
Place all ingredients for the crumble in a bowl. With your fingers, begin to squeeze together to combine. Continue until the butter softens and everything begins to clump together. Distribute topping over the fruit.
Bake in the oven until the crumble is golden brown, about 20-30 minutes.
