Master perfectly airy, delicate ciabatta bread at home.Made of the highest quality French stoneware, this pan helps you do it! Designed specially to achieve ciabatta's unique crumb structure. Here's how it works: The lid traps steam during baking to replicate the environment of a steam-injected oven. This steam allows the bread to expand fully, and also creates a crisp, crackly crust. Holds a recipe with 3 to 4 cups of flour. 15" x 9" x 1½" (makes two 14¾" long loaves).

For Cleaning & Care of the product with unglazed area, simply use dishwashing liquid, water, and a sponge – rinse well and air dry.

Ciabatta Baker

This is my fourth bread baker made by Emile Henry and love them all. The first time using the baker the instructions were to let bread rise and then move them to the heated bakers. I found that lifting the raised loaves was difficult; therefore I chose to cut parchment paper the size of the cavities and allowed the loaves to rise on the paper which made moving the loaves to the hot baker extremely easy. This second batch turned out excellent.

I like it alot

Have only used twice, but can see it bakes well and makes a good crust. It can go into the oven cold, with risen dough and bakes fine. So much easier than trying to put risen dough into preheated baker. Using it same as I do with baguette baker-do not preheat, but raise dough in bakers.

Wow!

This ciabatta baker makes the BEST bread. It comes with two recipes. One produces excellent ciabatta within hours of starting to assemble ingredients, and the bread is excellent. The second requires an overnight starter which somehow produces an even better loaf. Either version makes me seem like an expert baker, getting rave reviews from anyone I've broken bread with.

Best Ciabatta Ever

Just purchased the ceramic ciabatta bread pan. Followed your recipe for the Rustic Ciabatta, and the bread was absolutely awesome. My wife and I both thought it was the best ciabatta we have had, even at the top restaurants we have visited around the country. It is full of large holes and the crust is a beautiful golden brown and absolutely crunchy. The pan was a little on the expensive side, but it was worth every penny we paid and more. It was a perfect complement to the chicken cacciatore I made in the pressure cooker. I will be making many more loaves of ciabatta in the ceramic baking pan. Thank you for the opportunity to develop my bread making skills.
