Traditionally, Pain d’Epi is made from a classic french bread recipe. It is a baguette that is cut in a way that resembles a wheat stalk. Produces petite wheat stalk baguette loaves with crispy crust and airy interiors. Burgundian clay absorbs and retains heat evenly for gentle, uniform baking. Releases bread easily and will not chip, crack, craze or absorb odors or flavors. Designed for shaping, proofing, and baking in one vessel. Turns out two wheat stalk loaves.
For Cleaning & Care of the product with unglazed area, simply use dishwashing liquid, water, and a sponge – rinse well and air dry.

I wanted something that would make the cool looking “wheat stalk” baguettes I’ve seen. IF you follow their instructions, and can actually make a pencil thin 36” long dough needle, you’ll stilled up with what looks like a squiggle. If you go to the trouble of cutting the dough needle into 20 or 30 little pieces and place those in the baker, you might get the desired effect. Of you could save the $150 and make a normal baguette, and before baking cut dough almost through at 10 places along the length and then flip the baguette over every other slice...

Produced a very nice mini baguette. I also used this baker to make sub rolls to sell at the farmers market. This is a great baking product.
Just like all my other bakers this one is terrific, the loaves turned out perfect and the crust was incredible!!
