I like crispy chicken skin and was always frustrated at how much of the skin was not crispy when I cooked chicken in a roasting pan. This gadget has resulted in all of the skin being crispy, plus the meat is surprisingly juicy and tender. It also has required no effort at all in terms of basting or checking. (I cook it at a low temperature such as 275F at first and then turn up the heat to 400F at the end.) The juices collect nicely in the basin without risk of overflowing even with a large chicken. It's worked well for duck too. Cleans up easily, stores compactly in the original box, lighter weight than cast iron. A great purchase!
This is an extremely easy way to get a restaurant quality meal, and truth be told, there's the twin satisfaction of knowing you made a healthy meal plus how good it all tastes during the meal. The vegetables and poultry all rest right in the roaster, and what's even better is that there is no spillage into the oven. Clean-up means just cleaning the roaster itself when you're done, which is a snap both by hand or in the dishwasher. Tip: brine your poultry beforehand. I use one cup of kosher salt, a quarter-cup of sugar, and add a little poultry seasoning to the water, then let the poultry set in the water for five hours. Pat dry, cover with foil then put in the fridge for 5-6 hours. The chicken is very juicy and the skin is perfection.
I love my chicken roaster! It is the easiest dinner for me to make by just putting a chicken on the stand, adding some spices and a little basting oil. The chicken always comes out perfect. I loved the one I had so much that I bought myself a second one for serving a larger crowd and I purchased one for my daughter who is a newlywed.
