Master perfectly airy, delicate ciabatta bread at home. Made of the highest quality French stoneware, this pan helps you do it! Designed specially to achieve ciabatta's unique crumb structure. Here's how it works: The lid traps steam during baking to replicate the environment of a steam-injected oven. This steam allows the bread to expand fully, and also creates a crisp, crackly crust. Holds a recipe with 3 to 4 cups of flour. 15" x 9" x 1½" (makes two 14¾" long loaves).

For Cleaning & Care of the product with unglazed area, simply use dishwashing liquid, water, and a sponge – rinse well and air dry.

Resistance Against Temperature Changes: A dish or stewpot should be able to withstand wide variations in temperature. Our ceramics allow our products to be taken directly from the freezer to the hot oven (+250°C/500°F).


Resistance Against Fading Colors: Heat, the dishwasher or sharp instruments will all have an aging effect on a product. Our glazes are particularly resistant to the dishwasher and the most aggressive of detergents.

Loved the result, not the process

The results was a browned, crispy and delicious loaf. However, I felt the recipe that came with the baker recommended a somewhat dangerous process. Having to put the bottom part in the oven at 500 degrees and then pull it out to add the dough was precarious to say the least. Never mind that transferring the dough was a messy process. I have since read that others have found ways around this, including using parchment paper to rise the dough or just putting the dough in cold. I have not as of yet had time to try these methods. I do feel that Emile Henry should weigh in on this and provide alternatives. This problem certainly lessens my opinion of the customer service provided by Emile Henry.

Love the pan

Haven't had time with the holidays to use it yet but I'm sure it will be as wonderful as all my other Emile Henry baking pans i.e. bread loafer, Italian baker, baguette (large and mini) and bread pot. I love them.

Great results

I followed the recipe and agree. They does really sticky and mushy. However, the end result on the four batches of done so far, have been great, chopped up some rosemary, and added to a couple loaves, and received while comments from tasters highly recommend the product.
