Apple Honey Souffles


  • 2 Golden Delicious apples
  • 1 ½ tbsp vanilla sugar
  • juice from 1/2 of a lemon
  • 2 tbsp honey
  • 1/4 cup + 1 ½ tbsp sugar
  • 1 egg yolk
  • 3 egg whites
  • 2 tsp butter
  • For presentation: 1 tbsp powdered sugar
  • 4 tsp honey

Temperature: 390 ° F


Peel the apples, dice them and pour the lemon juice over them. In a skillet over low heat, warm up the honey. Add the apples and cook them for around 5 minutes until they are lightly caramelized. Butter the ramekins and spread the caramelized apple cubes in the bottom of each. Put the egg yolk, the vanilla sugar and 1/8 cup of the sugar in a mixer bowl. Whisk until frothy. Preheat the oven to 390° F. Beat the egg whites until soft peaks form. Add the rest of the sugar and beat until stiff peaks form. With a baking spatula, delicately fold the egg whites into the egg yolk-sugar mixture, being careful not to crush the meringue. Spoon gently into the ramekins and smooth over the tops. Put in the oven and immediately turn the temperature down to 360° F. Bake for 12 minutes. Remove from the oven, sprinkle with powdered sugar and decorate with a little honey.
