Beanless Ancho Chili with Jackfruit

Ingredients

  • 1/3 Cup each zucchini, squash, and eggplant
  • 28 Ounces diced tomatoes
  • 2 Celery sticks and carrots, chopped
  • 1 Red and green bell pepper, chopped
  • 1 Medium onion, chopped
  • 10 Ounces cooked jackfruit
  • 2 Jalapenos, seeded and sliced
  • 1 Banana pepper, seeded and sliced
  • 3 Ounces mild green chilies
  • 4 Garlic cloves, minced
  • 3 Cups Vegetable Broth
  • 3 Tbsp. Gustus Vitae Ancho Chile Sea Salt

Instructions

1. On low heat, heat olive oil and mix in onions in Émile Henry Chili Pot 2. Add red and green bell pepper, carrots, celery, jalapenos, banana pepper, and garlic. 3. Mix vegetables and cook 4. Add zucchini, squash, eggplant, mild green chilies, and diced tomatoes 5. Mix vegetables and cook 6. Add vegetable broth, jackfruit, and Gustus Vitae Ancho Chile Sea Salt 7.
