Cauliflower Pizza Crust


  • Nonstick olive oil spray
  • 1/2 LARGE head cauliflower (or 2+ cups shredded cauliflower)
  • 1 large egg, lightly beaten
  • 1 – 1.5 cup finely shredded mozzarella cheese
  • 2 tablespoons grated parmesan cheese
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried minced garlic (or fresh garlic)
  • 1/2 teaspoon onion salt

Temperature: 425 ° F


1. Line a rimmed baking sheet with parchment paper, or spray with olive oil spray or try pizza stone, and preheat oven to 425°F. 2. Shred the cauliflower into small crumbles. You can use the food processor if you'd like, but you just want crumbles, not puree. You'll need a total of about 2 cups or so of cauliflower crumbles (which is about half a large head of cauliflower). 3. Place the cauliflower crumbles in a large bowl and microwave them (dry) for 8 minutes. Give the cauliflower a chance to cool (2 cups will shrink to about 1.5 cups. 4. In a separate medium bowl, mix in the egg, one cup mozzarella, parmesan cheese, and spices. 5. Once combined, pat into a 10-inch round on the prepared pizza pan. Bake for 10 to 15 minutes, or until golden. 6. Top the pizza with the sauce, 1/4 cup mozzarella, and red pepper flakes. Bake in the oven until melted and bubbly, another 5-10 minutes. Top with basil before serving.
