Crown loaf with bacon and grated cheese


  • 14 oz white flour type 55
  • 7 oz warm water
  • 2 tsp dried yeast
  • 2 tsp caster sugar
  • 1 1/2 tsp salt
  • 3 oz smoked bacon or lardons
  • 1 tbsp strong mustard
  • 3 1/2 oz grated cheese (cheddar, gruyere)

Cut the bacon into small pieces and fry without any additional fat. Leave to cool. In a food processor or kitchen bowl, mix together the flour, salt, sugar, dried yeast and bacon. Pour in the warm water and knead for 2-3 minutes. If using a food processor, keep on a low speed. Cover with a tea towel and leave to rise for 1 hour and 30 minutes in a warm place. Knead the dough again to remove any remaining carbon dioxide. Make a crown shape with whole in the middle ( 3-4' in diameter). Place on the floured platter. Spread the mustard over the top and sprinkle with the grated cheese. Leave to rise again for 1 hour at room temperature with the cloche. For this recipe, there is no need to cut the surface, as the mustard and cheese will make a nice, crispy crust. Place in a cold oven and turn on the temperature at 460°F. Cook for 50 minutes. Leave to cool on the platter, having removed the cloche.
