Mediterranean Sea Bass


  • 1 ½ lb. – 2 lb. Sea Bass
  • 1 large yellow onion, sliced
  • 1 large zucchini, sliced ¼” thick
  • 1 large yellow summer squash, sliced ¼” thick
  • 1 bell pepper, julienned
  • 1 medium eggplant, halved and sliced ¼” thick
  • Extra virgin olive oil
  • Gustus Vitae Taste of Greece Gourmet Seasoning
  • ½ lemon
  • Salt & Pepper

Temperature: 350 ° F


Prep all vegetables and place into a large bowl. Drizzle with 1-2 teaspoons of extra virgin olive oil, season with salt and pepper, and a tablespoon of Gustus Vitae Taste of Greece. Transfer the vegetables in to the Emile Henry Fish Steamer. Lay the fish on top of the vegetables and drizzle with fresh squeezed lemon juice and a tablespoon of extra virgin olive oil. Sprinkle 2 tablespoons of Taste of Greece on top of the fish followed by a couple pinches of salt and pepper. Put the lid on the steamer and bake in the oven for 20-30 minutes, or until the Sea Bass is cooked to your desired temperature. *Cooking times may vary depending on the thickness of your filet.
