Tomato & Mozzarella Tatin 


  • 2 cans 14oz. peeled whole tomatoes
  • 1  garlic clove, peeled
  • 1 tbsp. olive oil
  • 4 oz. mazzarella cheese
  • 1 bunch basil, washed
  • 8 oz.  ready-made puff pastry
  • salt and pepper
  • fresh oregano, for garnish

Temperature: 400 ° F


1. Preheat oven to 400°. Drain, seed and chop tomatoes. Chop peeled garlic and basil. 2. Heat olive oil in Emile Henry Tarte Tatin Pan, add tomatoes with garlic, basil, salt, pepper. Cook on high heat until almost dry. 3. Drain mozzarella, pat dry and cut into thick slices. Place cheese slices over tomato mixture in Emile Henry Tarte Tatin Pan and top with rolled out puff pastry. 4. Bake for 25 minutes. Turn out into Emile Henry Serving Platter and sprinkle with oregano.
