Zucchini Pizza Boats


  • 1 large zucchini (or yellow squash)
  • 4 oz. ground turkey
  • Pizza sauce
  • Fat free shredded mozzarella cheese
  • Salt
  • Pepper

Temperature: 375 ° F


Preheat the oven to 375F. In your Mauviel M’cook fry pan, cook the ground turkey and season with a couple pinches of salt and pepper. While the turkey is cooking, cut the ends off of the zucchini and slice lengthwise down the middle. Use the Rosle Ice Cream Scoop to create a moat down the center of each half. Place the zucchini, skin side down, in an Emile Henry Square Baker. Spoon the ground turkey into each side, cover with pizza sauce, and top with mozzarella. Cover the baker with aluminum foil and bake for 40 minutes.
