I've used dutch ovens for a number of years with mixed results, usually having to pad the bottom of them with lots of parchment paper to insulate the bread from burning on the bottom while the crust forms. With this bread cloche, no more burnt undersides of my bread! The cloche forms an amazing and even crust leaving a wonderfully soft crumb. I love the shape. While it doesn't have the sides of a dutch oven you might desire if your dough is prone to spread, but somehow with pre-heating the cloche, it controls spread for a nice even rise. I loved it so much I bought another. If you are on the fence, go for it. You will not be dissapointed.
I'm so happy I bought this cloche! My sourdough has been turning out beautifully-- great oven spring and texture. It's light enough for me to handle easily with dough in it, and the design allows me to the remove the lid in the oven with my silicone oven mitts on without a problem. I haven't had any problems with sticking, and the cloche cleans up very easily. With the flat design I can stack something on top of it in the cupboard. I tried using the lid for mixing/proofing the dough, but the slight texture inside makes it less than ideal as a mixing bowl. The fig color is gorgeous!
Great Product-needs some more guidance to be used properly
I did have some issues with following the recipe successfully. Although it was simple, it seems the ratios were not quite right. A really good product like this deserves more attention to detail on the best care and recipes to use. For example, I used flour on the plate when I baked at 450 and it took me quite a while to clean up that burnt flour on the plate. Again, lots of potential and I will try different way to make this work better but I would have appreciated that information right from the beginning.
I have baked bread for decades and this makes some of the most beautiful loaves I’ve ever made.
