Old Fashioned Apple Pie

This month I'm welcoming fall with a true classic and a family favorite - my Old Fashioned Apple Pie. Crisp, flaky crust, tender spiced apples with a warm hint of cinnamon, it's the kind of pie that brings everyone to the table and is hard to eat just one slice!
Ingredients for the Pie Crust-
  • 2 2/3 cups all-purpose flour
  • ½ teaspoon salt
  • 1 cup salted butter, cold and diced
  • 7-8 tablespoons ice-cold water
Instructions:

1. In a large bowl, combine flour and salt.
2. Add the cold, diced butter and use a pastry cutter or your fingertips to blend until
the mixture resembles coarse crumbs.
3. Gradually add the ice water, one tablespoon at a time, mixing gently until the dough
comes together in a ball.
4. Divide in half, wrap each portion in plastic wrap, and refrigerate for at least 1 hour.
Ingredients for the Apple Filling-
  • 8-9 large baking apples (peeled, cored, and thinly sliced):
  • 1 ½ cups sugar
  • 2 tablespoons ground cinnamon
  • 2 tablespoons butter, diced
  • Additional sugar (for sprinkling on top)

Assembly:

  1. Preheat oven to 400 degrees F (200 degrees C)
  2. On a floured surface, roll out one portion of the chilled dough to fit a 9-inch pie dish. Gently press into the dish.
  3. Add the apple filling, spreading it evenly. Dot the top with the diced butter.
  4. Roll out the second portion of dough and place it over the filling. Trim and crimp the edges to seal. If not using a lattice crust, cut a few small slits on the top crust to allow steam to escape.
  5. Sprinkle the top lightly with sugar.
Baking:
  1. Bake for 1 hour 10 minutes, or until the crust is golden brown and the filling is
  2. bubbling.
  3. Check the pie halfway through, and cover with foil if top is browning too much.
  4. Let the pie cool completely on a wire rack.
For best results, refrigerate for a few hours before serving to help the filling set.
