French Lemon Yogurt Cake

Ingredients-

  • 1 cup sugar
  • 1 ½ cups flour
  • 2 teaspoons of baking powder
  • Pinch of salt
  • ¾ cup whole milk yogurt
  • 3 eggs room temperature
  • 3 teaspoons grated lemon zest
  • 1/8 teaspoon vanilla extract
  • ½ cup salted butter, melted and cooled slightly
  • Powdered sugar for dusting
  • Lemon syrup: ½ cup sugar 1/3 cup fresh lemon juice

Directions-

  1. Melt butter, cool slightly, set aside.
  2. Prepare (grease, flour and line with parchment paper) cake dish.
  3. Preheat oven to 350 degrees.
  4. In a small bowl combine flour, baking powder, salt. Set aside.
  5. In a large bowl whisk together sugar and eggs until light, thick and frothy, then gently stir in yogurt, vanilla, lemon zest.
  6. Fold in dry ingredients, then melted butter.
  7. Pour into cake dish, bake for 30-40 minutes until cake tester comes out clean.
  8. Cool in the cake dish.
  9. Meanwhile, make the lemon syrup - whisk together the ½ cup sugar and 1/3 cup lemon juice, heat on stovetop until sugar is dissolved.
  10. Pour evenly over cake while it’s still warm in the pan, letting the lemon syrup completely absorb.
  11. Dust with powdered sugar.
  12. Enjoy!
