French Lemon Yogurt Cake
Ingredients-
- 1 cup sugar
 - 1 ½ cups flour
 - 2 teaspoons of baking powder
 - Pinch of salt
 - ¾ cup whole milk yogurt
 - 3 eggs room temperature
 - 3 teaspoons grated lemon zest
 - 1/8 teaspoon vanilla extract
 - ½ cup salted butter, melted and cooled slightly
 - Powdered sugar for dusting
 - Lemon syrup: ½ cup sugar 1/3 cup fresh lemon juice
 
Directions-
- Melt butter, cool slightly, set aside.
 - Prepare (grease, flour and line with parchment paper) cake dish.
 - Preheat oven to 350 degrees.
 - In a small bowl combine flour, baking powder, salt. Set aside.
 - In a large bowl whisk together sugar and eggs until light, thick and frothy, then gently stir in yogurt, vanilla, lemon zest.
 - Fold in dry ingredients, then melted butter.
 - Pour into cake dish, bake for 30-40 minutes until cake tester comes out clean.
 - Cool in the cake dish.
 - Meanwhile, make the lemon syrup - whisk together the ½ cup sugar and 1/3 cup lemon juice, heat on stovetop until sugar is dissolved.
 - Pour evenly over cake while it’s still warm in the pan, letting the lemon syrup completely absorb.
 - Dust with powdered sugar.
 - Enjoy!
